(Lima, 1981) He studied Culinary Arts and Food Service Management at the Johnson & Wales University (Rhode Island, USA). Upon graduating, he moved to Osaka to learn about Japanese cuisine, working in restaurants like Seto Sushi and Imo to Daikon; the first specialized in sushi and the second in izakaya (Japanese tapas). He later returned to Peru and worked at the Hotel Sheraton for 5 years, where he was sous chef until he took over food and drink management. His passion for Japanese and Peruvian cookery led him to create Maido (2009), a space that allows him to express his talent for new culinary trends, where Peruvian and Japanese food are fused into one cuisine.
