celebrating local, sustainable food at Hay

As part of the ongoing project to be the UK's greenest festival, Hay Festival today celebrated three top traders in the Food Hall, who demonstrated local and responsible sourcing, energy efficiency, and waste reduction measures. Andy Fryers, Sustainability Director at Hay Festival, praised the winner, The Fritter Shack, whose set-up is mainly solar powered, their stall is built from reclaimed materials, and their vehicles run on biofuel. Highly recommended were Squid Inc. (silver award) and Yellow Turban Thali (bronze award).
