clavijo-alvaro Trained in some of the finest kitchens in Europe and New York, including Joël Robuchon’s Bristol and L'Atelier, Noma in Denmark, and Perse and Atera in New York. After studying at the Hofmann School in Barcelona, Clavijo decided to return to Colombia to open El Chato, his restaurant in the Chapinero neighbourhood of Bogota. This contemporary bistro puts Colombian ingredients, particularly from small producers, at the heart of its menu, which is prepared with the varied international techniques that Clavijo has acquired during his career. In 2018 El Chato entered the list of Latin America’s 50 Best, in 22nd position, as the highest new entry that year. In 2019 it was rated the 7th best in Latin America, and Colombia’s finest on the list. In 2020, despite the Covid-19 crisis and the temporary closure of restaurants in Colombia, Clavijo continued his commitment to the project, and during this period was able to support a hostel, taking food to people in a situation of vulnerability.
