A cook, writer, businessman and promotor of Peruvian food and drink. Since the inauguration of his restaurant Astrid & Gastón in 1994 in Lima, Acurio has opened 34 restaurants dedicated to different Peruvian specialities in 11 countries around the world. In 2007 Acurio founded the Pachacútec Cookery School, which trains young people from poor backgrounds to be chefs and waiters. In 2015 he also announced a gastronomic education project together with the Pontificia Universidad Católica de Perú. Today Acurio runs a company that is present in 13 different cities, with 11 different concepts and brands.
