Peruvian cuisine

Peru has become an essential international culinary destination for lovers of good food, but it still remains for Peruvians to broaden their knowledge of their own cuisine. Intended as a general cultural contribution to the public, and as a promotional strategy for going beyond stereotypes, at this event a critic and a chef will examine the culinary scene in Peru. The respected food journalist, writer and consultant, Ignacio Medina (Spain), has been a critic for media outlets including El País, El Sol, El Mundo, Panorama, Época and Guía del Ocio de Madrid in Spain; and Cosas, Poder, Somos, Luces and El Comercio in Peru. Winner on two occasions (1987 and 2009) of the National Gastronomy Prize, awarded by the Spanish Academy of Gastronomy, he has published over 80 books on food, the last two on Peruvian cuisine. The chef and restaurant entrepreneur, Miguel Schiaffino, from Lima, studied at the Culinary Institute of America, New York, and at the Italian Culinary Institute for Foreigners. Founder of the restaurants Malabar, La Pescadería, Nikita and Amaz, Schiaffino is a vocal advocate for the art and culture of the Amazon, and part of his culinary proposal consists of recreating and popularizing the culinary traditions of the Amazon region. They will talk to Maria Elena Cornejo.
